So the rice I made during meal prep recently turned into a mushy, horrible, gross, sticky mess
I wasn’t sure how to salvage the starchy mess but then I remembered I’ve done 2 things that were yummy, if not a little ‘mushy’ texture wise
fried plantains fried left over mashed potato pancakes Turns out mushy rice will cook up similar to plantain/mashed potato if you form it into a patty of sorts, put some canola oil in a pan and then fry the ever loving shit out of it like you would other starches

Notes Brown Rice Substitution From BudgetBytes: Brown rice requires more liquid and a much longer cook time than white rice, so you will need to take these into account if you attempt to substitute brown rice for the white rice in this recipe. While I havent tested a brown rice version, I would probably add at least another cup of chicken broth and increase the simmer time to closer to 40 minutes.

Notes If you cant find Andouille sausage you can use any other type of smoked sausage. The sausage I bought came in a 14oz. package, but you can use anywhere from 12-16oz.

Notes The trick is seasoning it throughout and make sure that the pepper burns the back of your mouth and there’s a smokiness in it
