## Soup! {#soup}
This is my let's get better from our cold or flu soup.
Always garlic, often horseradish, sometimes ginger.Often Mince meat, today added sausage. Always Mushrooms and onion.Let the potatoes and carrots cook while you cut and fry the other stuff.
I use a little bit of green curry paste as a base flavor, along with a stock cube, some grillkrydda (kind of bbq spice), some extra powdered stock (today vegeta seasoning).Back in the day I often had different types of chili sauce as well.
When onion and garlic and mince or other meat and mushrooms are fried to taste, add the spices, chili or w/e, and some soy sauce, then some extra water after a little bit to deglace.
Put it all together, let it cook together for a few minutes. This is a soup I created to be quick and easy, usually I'd be done with it in 20min and I didn't really have it cook together for very long but always had leftovers.
How much you say?One potato and one carrot per person is plenty, and the rest fills it out and can be added to taste. I'd always have leftovers.
Speaking of leftovers, today I did add in some leftover cherry tomatoes and sausage, neither of which is part of the base.Additional: tomato paste and bay leaves are also optional.

## Instructions {#instructions}
### Ingredients {#ingredients}
1. In a small bowl, combine the breadcrumbs, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper. In a separate small bowl, lightly whisk the two eggs.
2. Add the breadcrumb mixture, eggs, milk, Italian sausage, and ground beef to a large bowl. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing the meat.
3. Let the meatball mixture rest for five minutes to allow the breadcrumbs time to soften. Divide and shape the meat into about 40 meatballs, approximately 2 Tbsp in volume each.
### Oven Cooking Instructions {#oven-cooking-instructions}
1. Preheat the oven to 400ºF. Line a baking sheet with parchment. Place the meatballs on the baking sheet about one inch apart from each other.
2. Bake the meatballs for about 15 minutes, or until lightly browned.
3. Transfer the meatballs to a pot of red sauce and simmer for five more minutes in the sauce. If not using a red sauce, add an additional 3-5 minutes to the bake time, or until the meatballs are cooked through.
### Stove Top Cooking Instructions {#stove-top-cooking-instructions}
1. Add a tablespoon of cooking oil to a large skillet and heat over medium. Once hot, swirl the oil to coat the surface of the skillet. Add half of the meatballs to the skillet.
2. Cook the meatballs, turning every couple of minutes, until browned on all sides and cooked through. Repeat with the second batch of meatballs.
3. Transfer the cooked meatballs to a pot of red sauce and simmer for a few minutes more before serving.
### Freezing instructions {#freezing-instructions}
1. You can freeze the meatballs either cooked or uncooked. I prefer freezing them already cooked so they can go straight from the freezer into a pot of red sauce and then just simmer until heated through. Cooked meatballs should be completely cooled before placing in a gallon-sized freezer bag and transferred to the freezer.
2. To freeze uncooked meatballs, place the raw meatballs on a parchment-lined baking sheet and freeze on the baking sheet until solid (1-2 hours) before transferring to a gallon-sized freezer bag for longer storage. Thaw completely before cooking.

## Optional Additions: {#optional-additions}
- Chia seeds flaxseeds, or hemp seeds
- Protein powder

- Dried fruit favorites: reduced-sugar dried cranberries, raisins, chopped dates
- Fresh fruit or frozen and thawed fruit

- An extra drizzle of honey or maple syrup
## Notes {#notes}
- Leftover steel cut oats can be stored in the refrigerator for up to 5 days. Their texture will soften as they sit, so if they are too chewy for you on Day 1, you can let them hang out a bit longer.
- The first day, the oats will be more liquidy, but they will continue to absorb more of the milk throughout the week. If at any point you'd like more milk, simply splash a little on top of your bowl or pour more in the individual mason jars if you are storing the steel cut oats that way.

## Notes {#notes}
- The double-dipping of the pork into the egg, then the cheesy crumbs, ensures the coating will stick to the meat. You can stir in a teaspoon of Dijon mustard to the egg or 1/2 to 1 teaspoon crushed dried herbs if you only have regular bread crumbs or plain panko.
- Browning the pork chops in the skillet helps give a headstart to baking in the oven.
- The thinner the pork chops, the quicker they will cook. Be sure to start checking doneness in the beginning of the bake range so that the pork is not overdone.
- A finely grated Parmesan creates a more even coating, but you could also use a coarser shred for a cheesier crust.
- You could sub in center-cut bone-in chops for the pork cutlets but look for the thicker chops. Bake until pork is no longer pink in center and meat thermometer inserted in center reads 145°F. The technique for browning the meat in a hot skillet first, then finishing it in a hot oven is a restaurant technique that ensures you dont overcook the pork.

<p>This is my let&rsquo;s get better from our cold or flu soup.</p>
<p>Always garlic, often horseradish, sometimes ginger.Often Mince meat, today added sausage. Always Mushrooms and onion.Let the potatoes and carrots cook while you cut and fry the other stuff.</p>
<p>I use a little bit of green curry paste as a base flavor, along with a stock cube, some grillkrydda (kind of bbq spice), some extra powdered stock (today vegeta seasoning).Back in the day I often had different types of chili sauce as well.</p>
<p>When onion and garlic and mince or other meat and mushrooms are fried to taste, add the spices, chili or w/e, and some soy sauce, then some extra water after a little bit to deglace.</p>
<p>Put it all together, let it cook together for a few minutes. This is a soup I created to be quick and easy, usually I&rsquo;d be done with it in 20min and I didn&rsquo;t really have it cook together for very long but always had leftovers.</p>
<p>How much you say?One potato and one carrot per person is plenty, and the rest fills it out and can be added to taste. I&rsquo;d always have leftovers.</p>
<p>Speaking of leftovers, today I did add in some leftover cherry tomatoes and sausage, neither of which is part of the base.Additional: tomato paste and bay leaves are also optional.</p>

<li>1/4 cup whole milk ($0.11)</li>
<li>1 lb. bulk Italian sausage ($3.00)</li>
<li>1 lb. ground beef ($5.99)</li>

<li>In a small bowl, combine the breadcrumbs, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper. In a separate small bowl, lightly whisk the two eggs.</li>
<li>Add the breadcrumb mixture, eggs, milk, Italian sausage, and ground beef to a large bowl. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing the meat.</li>
<li>Let the meatball mixture rest for five minutes to allow the breadcrumbs time to soften. Divide and shape the meat into about 40 meatballs, approximately 2 Tbsp in volume each.</li>
</ol>
<h3 id="oven-cooking-instructions">Oven Cooking Instructions</h3>
<ol>
<li>Preheat the oven to 400ºF. Line a baking sheet with parchment. Place the meatballs on the baking sheet about one inch apart from each other.</li>
<li>Bake the meatballs for about 15 minutes, or until lightly browned.</li>
<li>Transfer the meatballs to a pot of red sauce and simmer for five more minutes in the sauce. If not using a red sauce, add an additional 3-5 minutes to the bake time, or until the meatballs are cooked through.</li>
</ol>
<h3 id="stove-top-cooking-instructions">Stove Top Cooking Instructions</h3>
<ol>
<li>Add a tablespoon of cooking oil to a large skillet and heat over medium. Once hot, swirl the oil to coat the surface of the skillet. Add half of the meatballs to the skillet.</li>
<li>Cook the meatballs, turning every couple of minutes, until browned on all sides and cooked through. Repeat with the second batch of meatballs.</li>
<li>Transfer the cooked meatballs to a pot of red sauce and simmer for a few minutes more before serving.</li>
</ol>
<h3 id="freezing-instructions">Freezing instructions</h3>
<ol>
<li>You can freeze the meatballs either cooked or uncooked. I prefer freezing them already cooked so they can go straight from the freezer into a pot of red sauce and then just simmer until heated through. Cooked meatballs should be completely cooled before placing in a gallon-sized freezer bag and transferred to the freezer.</li>
<li>To freeze uncooked meatballs, place the raw meatballs on a parchment-lined baking sheet and freeze on the baking sheet until solid (1-2 hours) before transferring to a gallon-sized freezer bag for longer storage. Thaw completely before cooking.</li>

If storing as a single larger batch for the week, I find it is best to wait to add the fresh toppings/nuts until just before serving so that they don&rsquo;t all sink to the bottom.) <li>Leftover steel cut oats can be stored in the refrigerator for up to 5 days. Their texture will soften as they sit, so if they are too chewy for you on Day 1, you can let them hang out a bit longer.</li>
<li>The first day, the oats will be more liquidy, but they will continue to absorb more of the milk throughout the week. If at any point you&rsquo;d like more milk, simply splash a little on top of your bowl or pour more in the individual mason jars if you are storing the steel cut oats that way.</li>

<li>The double-dipping of the pork into the egg, then the cheesy crumbs, ensures the coating will stick to the meat. You can stir in a teaspoon of Dijon mustard to the egg or 1/2 to 1 teaspoon crushed dried herbs if you only have regular bread crumbs or plain panko.</li>
<li>Browning the pork chops in the skillet helps give a headstart to baking in the oven.</li>
<li>The thinner the pork chops, the quicker they will cook. Be sure to start checking doneness in the beginning of the bake range so that the pork is not overdone.</li>
<li>A finely grated Parmesan creates a more even coating, but you could also use a coarser shred for a cheesier crust.</li>
<li>You could sub in center-cut bone-in chops for the pork cutlets but look for the thicker chops. Bake until pork is no longer pink in center and meat thermometer inserted in center reads 145°F. The technique for browning the meat in a hot skillet first, then finishing it in a hot oven is a restaurant technique that ensures you dont overcook the pork.</li>
