The below setup keeps paper towel off the food so the grease won't make it soggy but still absorb excess liquid.
|
||||
|
||||
1. Get a sheet pan
|
||||
2. Line bottom with paper towel
|
||||
3. Put cooling rack _upside down_ on top of paper towel
|
||||
4. Put 'wet'_'oily'_'fried' foods on rack
