+The below setup keeps paper towel off the food so the grease won't make it soggy but still absorb excess liquid.
+
+1.  Get a sheet pan
+2.  Line bottom with paper towel
+3.  Put cooling rack _upside down_ on top of paper towel
+4.  Put 'wet'_'oily'_'fried' foods on rack
