Shape the mixture into 4-6 oval patties, about ¾ inch thick. Heat a skillet over medium-high heat. Add the patties and cook for about 4-5 minutes on each side, or until they’re nicely browned. Remove the patties from the skillet and set aside. They don’t need to be cooked through at this point. In the same skillet, melt the butter over medium heat. Add the sliced onions and cook until they’re softened and golden, about 5-7 minutes. Sprinkle the flour over the onions, stirring to combine. Cook for an additional minute to get rid of the raw flour taste. Gradually whisk in the beef broth, ensuring there are no lumps. Add the Worcestershire sauce and soy sauce. Bring the mixture to a simmer, and let it thicken for a few minutes. Taste and adjust seasoning with salt and pepper as needed. Return the patties to the skillet, nestling them into the mushroom gravy. Cover and simmer on low heat for about 10-15 minutes, or until the patties are fully cooked through and the gravy has thickened to your liking. Rest for a minute or so before serving. Notes To serve Serve over mashed potatoes or buttered egg noodles (like stroganoff). Cataloged here to ensure the information isn\u0026rsquo;t lost to the sands of time.\nPlain Water The most important thing you can do to avoid browning is to reduce the apple’s exposure to air. And the simplest way to do that is to submerge your apple slices in water. Since the slices will float to the top of the water, place a clean paper towel on top. Once the paper towel is wet, it will push the apples under the water\u0026rsquo;s surface. Another technique is to put the apple slices in zip-lock bags with the air pressed out. Neither of these techniques call for additional ingredients, and both work great for keeping the apples from browning.\nWater and Salt Dissolve 1/8 teaspoon of salt into one cup of water—always be careful not to add too much salt. Then add in the apple slices, let them soak for a few minutes, then drain them. Give the slices a quick rinse in fresh water after you drain them, so your fruit won\u0026rsquo;t taste salty.\nWater and Honey Stir two tablespoons of honey into one cup of water and soak your apple slices in the mixture for 30 seconds. This works because there is a compound in honey that stops the enzyme responsible for oxidation. Additionally, this is one of the methods that will not unpleasantly alter the apple\u0026rsquo;s taste.\nCitrus or Pineapple Juice If you want to take the submersion method up a notch, you can add a little bit of citrus or pineapple juice to the water. What do these juices have in common? They contain citric acid, which slows the chemical reaction and prevents browning. But there are actually a few ways to use juice in order prevent browning: 1) you can add two tablespoons of juice to water and submerge the apple slices, 2) you could submerge the apples into juice, or 3) you can simply squeeze lemon, lime, or orange directly onto the surface of the cut apple. The only downside of using this method is that the juice will impart a little bit of flavor onto the apple—so pick your favorite.\nTreat and Keep in an Air-Tight Container Again, the most important part of keeping apples from browning is to reduce or eliminate the apple’s exposure to air after it’s been cut. After you’ve chosen a method and treated your apples, store them in an air-tight container, this could be Tupperware or even a zip-lock bag. Then, keep them in the fridge.\nAlthough there’s no absolute way to prevent apples from turning brown forever, these methods will offer an additional hour or two before discoloration begins. So you no longer have to scarf down your apple slices at record speed, and you can keep \u0026rsquo;em looking fresh and tasty on fruit platters and in salads for way longer than apples that are untreated.\n","permalink":"https://culinary.kemonine.info/notes/2023/03/prevent-apple-browning/","tags":["Information","Apples"],"title":"Prevent Apple Browning"},{"categories":null,"contents":"Notes tastes good with honey tastes good with maple syrup tastes good with fruit ","permalink":"https://culinary.kemonine.info/recipes/2023/03/amaranth/","tags":["Vegetarian","Vegan","Amaranth"],"title":"Amaranth"},{"categories":null,"contents":"Chicken and Broccoli 1 lb chicken breast, (boneless skinless), cut into 3/4\u0026quot; pieces 2 Tbsp cooking oil, (I used extra light olive oil), divided 1 lb broccoli, cut into florets (about 5 cups) 1 small yellow onion, sliced into strips 1/2 lb white button mushrooms, thickly sliced Stir Fry Sauce Ingredients 2/3 cup low sodium chicken broth 3 Tbsp low sodium soy sauce, (use Tamari for gluten free), or added to taste 2 Tbsp light brown sugar, packed (or honey to taste) 1 Tbsp corn starch 1 Tbsp sesame oil 1 tsp fresh ginger, peeled and grated (lightly packed) 1 tsp garlic (2 small cloves), grated 1/4 tsp black pepper, plus more to season chicken Instructions In a small bowl, combine all of the sauce ingredients and whisk to dissolve sugar and corn starch (warm broth will help dissolve the sugar faster). Set sauce aside. Cut chicken into small bite-sized pieces (no more than 3/4” thick) and season lightly with pepper. Heat a large heavy skillet or wok over medium-high heat. Add 1 Tbsp oil. Add chicken in a single layer and let it sit undisturbed for 1 minute to get a good sear then stir fry for another 5 minutes or until golden brown just cooked through then remove to a bowl and loosely cover to keep warm. In the same skillet, add another 1 Tbsp oil along with broccoli florets, sliced onion and sliced mushrooms. Stir fry 3 minutes or until mushrooms are softened and broccoli is crisp-tender then reduce heat to medium/low. Give the sauce a quick stir in case there was any settling of starch and pour all of it over the vegetables. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing the meat. Let the meatball mixture rest for five minutes to allow the breadcrumbs time to soften. Divide and shape the meat into about 40 meatballs, approximately 2 Tbsp in volume each. Oven Cooking Instructions Preheat the oven to 400ºF. Line a baking sheet with parchment. Place the meatballs on the baking sheet about one inch apart from each other. Bake the meatballs for about 15 minutes, or until lightly browned. Transfer the meatballs to a pot of red sauce and simmer for five more minutes in the sauce. If not using a red sauce, add an additional 3-5 minutes to the bake time, or until the meatballs are cooked through. Stove Top Cooking Instructions Add a tablespoon of cooking oil to a large skillet and heat over medium. Once hot, swirl the oil to coat the surface of the skillet. Add half of the meatballs to the skillet. Cook the meatballs, turning every couple of minutes, until browned on all sides and cooked through. Repeat with the second batch of meatballs. Transfer the cooked meatballs to a pot of red sauce and simmer for a few minutes more before serving. Freezing instructions You can freeze the meatballs either cooked or uncooked. I prefer freezing them already cooked so they can go straight from the freezer into a pot of red sauce and then just simmer until heated through. Cooked meatballs should be completely cooled before placing in a gallon-sized freezer bag and transferred to the freezer. To freeze uncooked meatballs, place the raw meatballs on a parchment-lined baking sheet and freeze on the baking sheet until solid (1-2 hours) before transferring to a gallon-sized freezer bag for longer storage. Thaw completely before cooking. In the sense that all come from the same grain, yes. How they are processed, however, is different, which is why making a bowl of oatmeal with each of the different types of oats yields different results.\nSteel Cut Oats The best bowl of oatmeal. The oats are left whole and cut into pieces with a steel mill. Steel cut oats are the least processed and therefore maintain the best texture when cooked. They also take the longest amount of time to cook (as you will see, it’s worth waiting). If you need them ready in a hurry, this Instant Pot Steel Cut Oats recipe is perfect. Rolled Oats A respectable though not otherworldly bowl of oatmeal. The oats are steamed and pressed flat. If you are in a big hurry and need breakfast in a few minutes, rolled oats are reliable option. They are also my favorite for baking (steel cut oats stay way too crunchy). Instant Oats Just say no to a bowl of instant oatmeal. These are rolled oats that are cut into small pieces. By the time you heat them, they lose all texture (hence, mushy). Instant oats work nicely in some recipes where you don’t want the oatmeal to maintain its complete texture, like these Healthy No Bake Cookies, but would not be a good choice for a tasty breakfast. Notes For every 1 cup of steel cut oats, you’ll need 3 1/2 to 4 cups of liquid, depending upon how thick you’d like them to be (less liquid = thicker steel cut oatmeal). Choose Your Texture. Once the oats have been simmering 20 minutes, they’ll need about 5 to 10 minutes of additional simmering to reach their ideal texture. “Ideal” is defined by YOU, the oatmeal chef! Like your oats more chewy? Stop cooking them sooner. Softer, thicker, and creamier is more your style? Let them go the full half hour. Thirty minutes is my personal steel cut oatmeal sweet spot. The oats will continue to thicken as they cool, so don’t panic if they seem too thin. Leftover steel cut oatmeal is a meal-prepper’s dream! Store leftovers in the refrigerator for up to 5 days, either as one large batch or in individual portions. Oatmeal will thicken as it chills.
