Add onion, oil, salt to pot, high heat. Stir briefly.Add 3/4 c. water. Cover til water boils off, ~7m.Move heat to med. low; stir frequently til good color.Add slurry of 1/8 tsp. baking soda & 1 Tbsp. water. Heat med. low, stirring frequently, til slurry boiled off.
Notes
- The boiling/steaming breaks down the cells quicker; the baking soda speeds the chemical change that releases the sugars.
