Balsamic Fig Sauce

1 shallot2 tablespoon balsamic vinegar1 chicken stock concentrate1 tablespoon fig jam (cherry works too)rosemary (to taste)1 tablespoon butter

finely chop shallotheat pan on medium heatadd shallot and rosemary to pancook, tossing for 2-3 mins, until softenedadd jam, stock concentrate, 1/4 cup water and vinegar to panstir to combinesimmer for 2-3 minutes, until thickenedremove from heatstir in butterseason with salt and pepper to taste
