Tortellini Gratin

Ingredients

  • 1 yellow onion
  • 2 cloves garlic
  • 1/2 oz basil (to taste)
  • 16oz ground beef
  • 2 boxes crushed tomatoes (likely 2 16oz cans)
  • 18oz tortellini
  • 1/2 cup panko breadcrumbs
  • 1/4 cup parmesan cheese
  • 5oz spinach
  • 2 Tbsp sour cream
  • 4 tsp olive oil or canola or sunflower

Directions

  • pre heat broiler to high
  • bring large pot salted water to boil
  • dice onion
  • mince garlic
  • finely chop basil
  • heat drizzle of olive oil over medium high heat
  • add onions and garlic
  • toss until softened ; 4-5 mins
  • add beef and break into pieces until browned
  • add crushed tomatoes, basil and 1/2 cup water
  • stir and reduce to a low simmer until thickened 4-5 mins
  • add tortellini to boiling water ; cook until tender (3-4 mins)
  • Combine panko, parmesan cheese, a drizzle of olive oil, salt and pepper in a small bowl
  • transfer tortellini to pan with spinach and sour cream
  • stir gently until spinach wilts
  • transfer to baking pan and cover with breadcrumb mixture
  • broil until brown ; ~2 mins

can burn easy under broiler, watch closely
