Tortellini Gratin

1 yellow onion2 cloves garlic1/2 oz basil (to taste)16oz ground beef2 boxes crushed tomatoes (likely 2 16oz cans)18oz tortellini1/2 cup panko breadcrumbs1/4 cup parmesan cheese5oz spinach2 Tbsp sour cream4 tsp olive oil or canola or sunflower

pre heat broiler to highbring large pot salted water to boildice onionmince garlicfinely chop basilheat drizzle of olive oil over medium high heatadd onions and garlictoss until softened ; 4-5 minsadd beef and break into pieces until brownedadd crushed tomatoes, basil and 1/2 cup waterstir and reduce to a low simmer until thickened 4-5 minsadd tortellini to boiling water ; cook until tender (3-4 mins)Combine panko, parmesan cheese, a drizzle of olive oil, salt and pepper in a small bowltransfer tortellini to pan with spinach and sour creamstir gently until spinach wiltstransfer to baking pan and cover with breadcrumb mixturebroil until brown ; ~2 mins
can burn easy under broiler, watch closely
