Red Beans, Sausage and Rice Skillet

Ingredients

  • 1/2 pack bratwurst or 8-12oz sausage ; cut into rounds
  • 1 bag frozen corn
  • 1 can kidney beans ; drained & rinsed
  • 1 cup white jasmine rice
  • 2 cups veggie broth
  • 2 Tbsp chili powder

Directions

  • lightly brown brat/sausage
  • add corn and cook briefly (take the cold off some)
  • add kidney beans, mix
  • dust spice over top
  • stir to combine / toast spice
  • add broth, scrape brown bits off bottom of pan
  • stir in rice
  • bring to boil (uncovered)
  • simmer, covered 15-20 mins (what the rice packaging says to do)
