Cherry and Balsamic Glaze

1 shallot2 tbsp balsamic vinegar1 1/2 tbsp cherry jam (can use fig)1/2 tsp sugar (optional)1 tbsp butter

thinly slice shallotadd shallot to pan over medium heattoss until lightly carmelized ; 4-5 minutesadd balsamic vinegar and simmer until syrupy and reduced by halfswirl in jam and 1 tbsp wateradd 1/2 tsp sugar (if needed ; unlikely to be needed…)season with salt and pepper to tasteremove pan from heatswirl in butter
